Just to amend the comment from gdalgliesh, it also appears to work if you simply download the bluez-pin-0.30-5 from http://download.fedora.redhat.com/pub/fedora/linux/core/6/i386/os/Fedora/RPMS/ and then install it along side the existing packages. There don't appear to be any actual package conflicts, just YUM improperly deciding to remove bluez-pin when it installs bluez-gnome.

Doing that, I successfully paired a phone and best of all, yum doesn't decide to remove it when you do your next update.
