How can I make a process be listed with a custom name on status screen?

You can set a display text for your PROC test.
Syntax is:

PROC processname minimumcount maximumcount color [TRACK=id] [TEXT=displaytext]

See the comments in hobbit-clients.cfg or the man page for it.

How can I put graphs from multiple hosts on one page?

Build an HTML page with links to the graphs you want like this:
