voice quality issues

I have been receiving sporadic reports of voice quality issues (garbled or choppy) on a production system I am trying to figure out.

It seems to be happening on the telco POTS trunk and the SIP trunk.

The sever has plenty of power and RAM, and is a good clean PiAF install.

The system is installed at a small business with a small/mid-size LAN. Usually max out at two simultaneous calls, sometimes three. I haven't been able to duplicate the problem yet.. I guess it comes and goes.

I haven't setup any VLAN's yet, so perhaps that could help with things... They do have heavy traffic on the LAN switch sometimes. My extensions are set for g722, maybe asterisk (1.6.22) chokes on the transcodes now and then? I have issued a TOP command and though it looks fine, I will continue to watch that. How should I log/monitor things while I am away? What tools could I use?

Setting up the VLAN's is a high priority... but feels slightly over my head at the moment. I see how to do it clearly (I think) on the Polycom endpoints.. but the edgemarc 4500 directions are a bit confusing.

My take is that I need to setup the edgemarc for a data lan and a voice lan. Then I need to have two connections to my house switch? Does the house switch need to be setup for vlans too, or just the edgemarc and the endpoints? I assume that I don't really need to touch the switch if the VLAN's are set elsewhere?? I need a good tutorial I guess.
